The beef tenderloin is located beneath the ribs, next to the cow’s backbone. It has two ends: The butt and the "tail". The smaller, pointed end—the "tail"—starts a little past the ribs. It grows in thickness until it ends in the "sirloin" cut, which is closer to the upper butt of the cow. The muscle in this region of the animal does very little work, so it is the tenderest part of the beef.
The tenderloin tail is also called the “Texas Tail” or “Tennessee Tail.” Further, if you slice your tenderloin tail, the result is known as “tenderloin tips.”
