The chuck roll is a large (approximately 20 pounds) boneless subprimal cut comprised of the long section of meat between the ribs and the backbone. Skilled butchers remove the ribs and backbone in one piece. Then this cut of meat is often divided in half. The section that overlays the ribs is typically used for ground beef. The remaining meat is trimmed and squared up, and called the chuck roll.
