Fresh white truffles are very rare and only available from October- December. Most commonly found in Italy, white truffles are flavorful and have an extreme pungent aroma. Although, they should be enjoyed as soon as possible, they can be stored in the fridge for up to 4 days. The best way to store white truffles is to wrap them in a paper cloth and changing that cloth daily. The most common way to use truffles is to shave paper thin slices of truffle on top of risotto or pasta.
