Flagship Reserve is a special version of our signature Flagship cheese, traditionally cloth-bound and open-air aged. This method allows a 14% to 16% moisture loss during aging, creating a slightly lower moisture, higher salt content which concentrates the already rich flavor while producing a long, creamy finish.
- Firm, natural rind, pasteurized cow’s milk cheese
- Affinage: Aged at 50 degrees and 90% humidity. Each truckle is first rubbed with butter. Then, they are hand-turned on a daily basis during the first two months of aging, three times a week for the following two months and then once per week through the remainder of the aging process.
