The Porterhouse steak is really two different steaks separated by a large bone. On one side, the larger, you have the amazing New York Strip steak. On the other side, the smaller one, is the buttery tenderloin.
The thick, bone-in cut means that you can grill, broil, or even roast this steak. You’ll probably want to grill or broil it for the best flavor because the meat shrinks on the bone as it heats. This can lead to uneven cooking of the tenderloin when you use a pan or skillet.
